Just a simple bento lunch today. I decided to make some wraps - flour tortillas filled with chicken schnitzel, homemade spicy tomato sauce and avocado. Wraps are a little like western sushi rolls - you stick the filling inside, roll 'em up and slice. As the chicken had been sitting with the avocado and tomato, it was no longer crunchy, but it was still tasty. The avocado and spicy tomato were a nice complement to the chicken as well as a form of guacamole and salsa to match the tortillas.
The second layer of the bento contained cut kiwi fruit and dragon fruit, as well as some asparagus and cherry tomatoes (for colour).

Thanks so much for your lovely comment :) I used to be very haphazard with recipes (a splash of this and that), but am finding that writing them up has forced me to be a little more precise, which is probably a good thing!

When you use avocado/guacomole in bentos do you just accept they will brown or is there something you put on them to keep them looking lucious? Thanks!
Hi eilis alana! The box is shaped like a loaf of bread, and it has a dog face on one side...
When I use avocado in bento and I want to keep it looking fresh, I will dip/brush the avocado with a little lime/lemon juice. If I'm making it for myself and I'm going to eat it in say the next hour or so, I won't usually bother - I'll just accept the slight browning!
